Bistro TWO opened on the banks of the Roer in September 2020. A classic bistro with a modern twist: enjoy comfort food, sample a delicious wine list and feel at home. No place to be too posh and stiff for the evening. Come and laugh, fizz and relax. The most important thing to do at Bistro TWO is enjoy. A delicious menu, the beautiful decor and each other.
That menu is full of fantastic, recognisable dishes that we prepare with respect for the ingredients and passion for the profession. At Bistro TWO we try to source as much as possible of what appears on your table from the region. Each season, sustainable products from local producers. So you can order what you really feel like and look forward to all week. Supported by a selection from our great wine collection, a fresh glass of beer or one of the many cocktails. That's what makes you happy.
Within the walls of the Bistro there is room for fifty guests, but there are several places to sit and let time fly by. Can you see yourself sitting on the beautiful terrace on the Roerkade? Or would you rather relax on the Rooftop, where you can watch the bells of the churches in the old centre of Roermond playing, or watch the Roer meander towards the horizon?
Bethany DeLong and Edwin Soumang started a second catering adventure with Bistro TWO in their home town of Roermond. Their Michelin-starred Restaurant ONE is less than five minutes away from Bistro TWO on the Roerkade, in the ECI factory. An earlier collaboration between Restaurant ONE and Hotel DUX proved fruitful for this new step.
Bistro TWO is run on a daily basis by restaurant manager Brandon Emmanuel and chef Lambert Walter. They both worked for several years at Restaurant ONE before seizing this opportunity with great enthusiasm and ambition.
Chef Lambert Walter previously worked at De Pastorale in Belgium, which was awarded two Michelin stars. He also cooked in the paradisiacal surroundings of the Maldives alongside World's best female chef Ana Roš on behalf of the JRE (Jeunes Restaurateurs d'Europe). On the menu, you can see his love for the power of simplicity, a personal recognizability and casual food. He wants to blow away the expectations you have of your visit and surprise you in a positive way. A special dinner, a pleasant experience, and a story you will tell all your friends.
Restaurant manager Brandon Emmanuel is equally responsible for that good experience. He takes care of the day-to-day operations and heads up the smooth staff that make for a flawless evening. When you visit, ask him about the wine list full of beautiful, surprising and Dutch wines and a selection of cocktails that you can't miss. Above all Brandon makes sure that you have a nice, carefree evening. It's all about you having a good time.
